* Exported from MasterCook * Swedish Pancakes Recipe By : Jon Promersberger with credit to Inez Hardwig Serving Size : 3 pancakes Preparation Time : 15 minutes Categories : Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 each eggs -- beaten 1 cup flour 1 1/3 tablespoons sugar 2/3 teaspoon salt 1 2/3 cups milk 9 teaspoons sugar -- to taste Beat eggs till thick and lemon-colored. Stir in dry ingredients mixing till smooth. Stir in milk to thin (add about half of the milk and stir to consistancy then add the rest of the milk). Drop by ladle onto moderately hot griddle. Spread batter evenly to make thin cakes. Turn when underside is light brown. Spread with butter and sprinkle with cinnamon and sugar.
